做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一(yī )遍(biàn ),放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。 -
