做法(fǎ ):洗净宰好鲫(jì )鱼,洗净淮山(shān )和(hé )薏米(mǐ )。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上(shàng )擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时(shí ),下盐调味即可品尝。 -
