做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦(wǎ )煲(bāo )里的清水(shuǐ ),放(fàng )入(rù )煎(jiān )煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火(huǒ )煲一个半小时,下盐(yán )调味即可品尝。 -
