做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小块姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸(fèi )瓦(wǎ )煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调(diào )味即可品尝。 -
