做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡(pào )软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个半小时,下盐调味即(jí )可品尝。 -
