做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。 -
