做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用(yòng )清(qīng )水把陈(chén )皮泡软(ruǎn ),拍裂一小块(kuài )姜(jiāng ),热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中(zhōng )小火(huǒ )煲一个(gè )半小(xiǎo )时,下盐调(diào )味即可品尝(cháng )。 -
